10 MINUTE KALE, MUSHROOM & RED ONION STIR FRY
Today I found a bag of kale in the 50% off bargain bin at @freshco and had mushrooms to use up, so I threw together this Kale, Mushroom & Red Onion Stir Fry in just 10 minutes! 🍄🌿🧅
These sautéed veggies + the bold mix of balsamic, soy sauce & sriracha = the perfect quick meal. I served it over fluffy rice and it turned out to be an instant hit with my guys. They came back for a second helping just to find the pan was empty. I'll be making this again and again.
INGREDIENTS
2 tbsp avocado or olive oil
1 tbsp butter
6-8 cups kale, stems removed and leaves cut into bite size pieces
1 1/2 cups (250 grams) brown or white mushrooms, cut in half
1 medium red onion, sliced
1 1/2 tbsp balsamic vinegar
1 1/2 tbsp soy sauce
1-2 tsp sriracha sauce
1/2 tsp chicken bouillon powder
1/4 tsp red pepper flakes
1/4 tsp black pepper
DIRECTIONS
Heat the oil and butter over medium-high heat in a large skillet.
Add the sliced onions and mushrooms. Cook for 5-6 minutes until onions are tender and mushrooms are beginning to caramelize.
Add the kale leaves and stir well. Cook for another 2-3 minutes until the kale leaves are bright green and tender. Stir in the balsamic vinegar, sriracha, bouillon powder, soy sauce, red pepper flakes and black pepper. Stir well and cook for another minute.
Serve over rice or mashed potatoes.
