EASY BUTTERSCOTCH BARS
I am digging out my quickest Christmas treat recipes as this month has been entirely too hectic around here which means I’ve put off my Christmas baking until the last minute. These butterscotch bars are a breeze to make and are super rich and ‘butterscotchy’. A small piece goes a long way which makes them perfect for sharing.
INGREDIENTS:
Whole graham crackers (enough to fit the bottom and top of a 9x9” pan)
3/4 cup butter
2/3 cup brown sugar, packed
1/2 cup milk
1 tsp Vanilla
1 1/4 cup graham crumbs
DIRECTIONS:
Line an ungreased 9”x9” pan with whole graham crackers, trimming to fit.
Blend butter, sugar, milk and vanilla in medium saucepan and bring to a boil. Lower the heat and simmer for 5 minutes. Remove from heat and stir in graham crumbs.
Pour over the crackers in the pan.
Cover with another layer of graham crackers, again trimming to fit. Cool completely.
Ice with the caramel butter icing and cut into squares.
CARAMEL ICING:
1/4 cup butter
1/2 cup brown sugar
2 tbsp milk or cream
1 cup icing sugar
Blend butter, sugar, and milk in a small saucepan. Bring to a boil and simmer for 2 minutes. Cool for 15 minutes before beating in icing sugar. Smooth over cooked bars.
Cut when fully set.
