CREAMY AVOCADO CILANTRO DIP
This is my version of a delicious Avocado Cilantro Dip a wonderful little market in our area makes and sells. (Medicine Hatters and Redcliff Folks, if you know, you know!)
I came up with my own recipe for the times when I can’t get out to their market and am craving it. It took me several attempts to get it to where I’m happy with the texture and flavours but it was well worth the effort and time.
We love to pair it with salsa and nachos, and also use it as a sauce for steak and/or fish tacos. It’s so so good! Bonus is that it’s super simple and easy to make too!

INGREDIENTS:
2 avocados, pits and peel removed
3 garlic cloves
1/2 cup mayonnaise
1/2 cup Greek yoghurt
2 jalapeños, seeds/ribs removed
1 large lime, juiced
1/2 cup chopped cilantro
1 tbsp avocado oil
1/4 tsp each of salt, pepper & sugar (or more to taste)
DIRECTIONS:
Add the mayonnaise and Greek yoghurt to a mixing bowl and set aside.
Place the rest of the ingredients in a food processor or blender and process until it is chopped very finely, stopping to scrape down the sides a few times.
Stir the green mixture into the mayonnaise and Greek yoghurt with a spoon or spatula. Adjust the salt, pepper, and sugar to your taste preference.
Store in an airtight container for 1-2 weeks.
