EASY HOMEMADE CHOCOLATE & FREEZE DRIED BERRY GRANOLA
My Homemade Chocolate & Freeze Dried Berry Granola is loaded with crunchy oats, rich dark chocolate chunks, and a medley of freeze dried strawberry and raspberry pieces. Each bite is a delightful explosion of flavours minus the preservatives found in store bought versions!
It's a versatile snack, great for munching on its own or paired with yogurt for a delicious parfait. You can even sprinkle it over your favourite ice cream for an indulgent twist.
INGREDIENTS
4 cups rolled oats
1/2 cup flaked coconut
1/2 cup chopped freeze dried strawberries, raspberries or both!)
1/3 cup dark chocolate chunks ( I chop a chocolate bar)
1/4 cup chia seeds
1/3 cup cocoa powder
1/2 cup coconut oil
1/4 cup maple syrup
1/2 cup light brown sugar
1/2 tsp sea salt
1 tsp vanilla extract
DIRECTIONS
Preheat the oven to 325 F.
Add the oats, coconut, cocoa, chia seeds to a large bowl and stir to combine.
In a small saucepan over medium-low heat, warm the coconut oil and maple syrup, brown sugar, salt and vanilla stirring until melted and combined. Pour over the dry ingredients and mix or stir well.
Spread the mixture onto a parchment paper lined baking sheet and bake in oven for 20-24 minutes, stirring once halfway through.
Remove the pan from the oven and let the granola cool completely before stirring in the chocolate chunks and chopped freeze dried berries.
Store in an air tight container for up to 2 months.
