BLT PASTA SALAD
We grill a lot during the spring and summer months. Like A LOT! In my humble opinion, bacon makes everything better so this salad is right up my tastebud alley. The creamy dressing is the perfect compliment to the bacon, lettuce, tomato and pasta that makes up this perfect and hearty salad for your family bbq’s, potluck dinners, picnics, Etc.
INGREDIENTS
3 cups cooked & cooled bow tie or rotini pasta
4 cups chopped or torn Romaine lettuce
1 1/2 cup quartered cherry or grape tomatoes
8 slices bacon, cooked until crispy, chopped
1/2 cup chopped red onion
1 green onion, chopped
Dressing
1/2 cup sour cream
1 cup mayonnaise
3/4 tsp garlic powder
1 tsp dill weed
1/2 tsp parsley
1/2 tsp onion powder
1/2 tsp salt (or more to taste)
1 tsp coarse black pepper
1 Tbsp apple cider vinegar
1 1/2 - 2 tsp sugar (to taste preference)
DIRECTIONS
Place all of the salad ingredients in a large bowl. Make sure pasta is cooled. (Running cold water over it in a colander cools it quickly)
In a small bowl, whisk the dressing ingredients together until well blended. Pour over salad and toss to coat.
Refrigerate until ready to serve.
