SMASHED GARLIC CRISPY ROASTED BABY POTATOES
This super easy recipe for roasted potatoes is a breeze to make and the flavour packed crunch factor is divine. Roasted with smashed garlic cloves and simple seasonings, this is the perfect side dish.
I like to serve them with a delicious basil & white balsamic aioli dipping sauce.
INGREDIENTS
2 lbs baby potatoes
One head of garlic, separated and cloves smashed
3 tbsp olive oil
1 tsp pink salt
3/4 tsp coarse black pepper
1/4 tsp parsley
1/4 tsp cayenne pepper
3/4 tsp garlic powder
1/2 tsp onion powder
DIRECTIONS
Preheat oven to 400 degrees F.
Wash and thoroughly dry baby potatoes and slice each in half.
Place all the cut potatoes in a large baking sheet (rimmed to contain oil).
Add the cloves smashed garlic.
Drizzle the potatoes and garlic with the olive oil.
Sprinkle the salt, pepper, parsley, cayenne, garlic and onion powders over the potatoes and massage in with your hands making sure to coat each potato.
Flip all potatoes so the cut side is down making sure there is space between each potato so they crisp up nicely.
Roast the potatoes in preheated oven for 40-45 minutes.
Remove from oven and serve immediately.
*** If doubling the recipe, be sure to use two pans so the potatoes aren’t touching as this will cause them to steam instead of roast.
