15 MINUTE PEANUT BUTTER BUTTERSCOTCH SQUARES
These squares are a Christmas treat staple in our home. Extremely easy and ready in 15 minutes, they are delicious, rich little morsels. You can use either plain white marshmallows or live a little and use the fruity colored ones. Both are equally yummy.
INGREDIENTS
1/2 cup butter
1/2 cup peanut butter
1/2 tsp vanilla extract
1 1/2 cups (approx 300g pkg) butterscotch chips
5 cups mini marshmallows
1/8 tsp salt
DIRECTIONS
Melt butter, butterscotch chips and peanut butter in a medium saucepan over low heat JUST until chips are mostly melted (about 3 minutes). Stir constantly.
Remove the pan from the heat, add the vanilla and salt and stir or whisk until it cools to room temperature BEFORE adding marshmallows as they will melt otherwise.
Stir in the marshmallows.
Pour into a greased or parchment paper lined 9×9 inch pan.
Refrigerate until they firm up. Cut into squares.
These last 2 weeks in the fridge and freezer well.
