EASY CAJUN CREAMED CORN

With peppers and onions fried with bacon and then added to corn niblets, Cajun seasoning and heavy cream, this classic Cajun creamed corn recipe is an outstanding Southern side dish worthy of second and third helpings.  Best of all, it is super easy and quick to make.  You can use frozen, fresh or canned corn for this recipe as well.

INGREDIENTS

  • 4 slices bacon, chopped

  • 3 cups frozen corn niblets (fresh or canned works as well)

  • 1 yellow onion, diced

  • 1 red bell pepper, diced

  • 1 jalapeno pepper, finely diced (leave out the seeds and inner white ribs if you don’t want it spicy)

  • 2 tsp Cajun seasoning (or more to taste preference)

  • ½ cup heavy cream

  • 1 tsp Franks Hot Sauce

DIRECTIONS

  • Sauté the bacon for 5 minutes and then add the onions and continue to cook until the onions are golden, about 8 minutes.

  • Stir in the corn, peppers and Cajun seasonings. Cook, stirring often for 10 minutes.

  • Add the heavy cream and let simmer for 3-5 minutes, stirring occasionally.

  • Remove from heat and serve.
