QUICK & EASY PEANUT LIME CHICKEN

🌟 You guys need to try my easy and super quick Peanut Lime Chicken recipe! 🥜 Blending the richness of peanut butter with the tang of lime juice creates a surprisingly delicious marinade for chicken. This quick and simple recipe is a scrumptious balance of creamy and tangy flavors, making it ideal for whipping up a speedy weeknight meal packed with savory goodness.

INGREDIENTS

  • 6-8 chicken thighs, boneless skinless

For the Peanut Sauce:

  • ½ cup creamy peanut butter

  • 1 cup full-fat coconut milk

  • 2 limes, zested (put zest aside for garnishing) and then juiced

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 2 tbsp brown sugar

  • 1/2 tsp sesame oil

  • 1 tbsp fresh ginger , minced

  • 3 cloves garlic minced

  • 1/2 tsp red pepper flakes

Garnish:

Chopped peanuts

Zest from the limes

A squeeze of lime juice

DIRECTIONS

  1. Preheat the oven to 375 degrees F.

  2. Grease a baking dish and arrange chicken thighs in it.

  3. In a large bowl mix the peanut sauce ingredients except the lime zest which you will use to garnish after chicken is baked.

  4. Pour the sauce over the chicken turning to completely coat each piece.

  5. Bake for 30-35 minutes or until the chicken is thoroughly cooked (to 165 degrees F).

  6. Garnish with chopped peanuts, a squeeze of lime juice and the reserved lime zest

  7. Serve with rice or noodles.
