EASY 5 MINUTE QUESO CHEESE DIP/SAUCE

This is my very simple and quick version of an authentic queso dip that tastes like one you may find at your favorite authentic Mexican restaurant.  It is also easy to tailor it to your own preferences by adding a can of Rotel tomatoes or even crumble a handful of my Freeze Dried Jalapeño Slices into it for kick.  We like to use it on nachos, mexifries, baked potatoes, etc.


INGREDIENTS:

  • 2 cups grated medium cheddar cheese

  • 1/4 cup whole milk, more if you like it thinner

  • 1 tablespoon butter

  • 1 tablespoon flour

  • 1/4 tsp onion or garlic powder (Try my Freeze Dried Roasted Garlic Powder!)

  • 1/4 tsp salt

  • 1/8 tsp cayenne if you want some bite

***Optional: small 4 oz can green chilis, a handful of our Freeze Dried Jalapeños or a can of Rotel tomatoes (they really add a lot of depth to this sauce!)

INSTRUCTIONS:

  • Melt butter in a saucepan and whisk in the flour. Continue to cook over low heat for 1 minute.

  • Slowly add the milk and continue stirring for 1-2 minutes until slightly thickened.

  • Add onion powder, salt and cheese, milk, and continue cooking over low heat until cheese is thoroughly melted - stirring frequently.

  • If using, stir in the green chillis, Freeze Dried Jalapeños or Rotel.

  • Add more milk if you want a thinner dip/sauce.

  • Serve immediately.
