PERI PERI CHICKEN RICE SOUP
I made a pot of this Peri Peri Chicken Rice soup today for a wonderful family in our church who are going through a series of lingering illnesses. It is a thick, rich and delicious chicken soup packed with chicken, rice, vegetables, loads of flavor and lots of love. I make my own bone broth which adds so much nutritional goodness to soup but you can use regular chicken broth.
For the peri peri sauce, you can use store bought (Nando’s medium Peri Peri sauce is really good), but I am adding my own recipe here if you’d like to make it yourself.
Serves 8 - 10
INGREDIENTS
1 roasted chicken, bones removed, chopped
8 cups chicken broth
2 tbsp vegetable oil
1 large yellow onion, diced
2 carrots, diced
3 stalks celery, chopped
1 1/2 cups frozen mixed veggies (optional)
1 1/2 cups parboiled rice (I like parboiled rice in soups as it largely retains its structure)
1/2 cup Nando’s medium peri peri sauce ( I make my own but buying it is much simpler)
1-2 tsp salt (or more to taste preference)
1/4 tsp black pepper
1/4 cup chopped fresh parsley
PERI PERI SAUCE (If you want to make your own)
(Purée the following ingredients together in blender and simmer in a pot on low for 15 minutes)
4 cloves garlic crushed (I use roasted but fresh works as well)
1 red onion, diced
2 tbsp sweet paprika
2 fire roasted red peppers
5 Thai red chilis, seeds removed and finely chopped (less if you don’t like heat)
¼ cup red wine vinegar
3 tbsp lemon juice
Zest of one lemon
2 tsp brown sugar
4 tsp dried oregano
2 tsp salt (more to taste)
1 tsp coarse black pepper
DIRECTIONS
Remove bones (and skin if you want) from roasted chicken and chop the meat. Set aside.
In a large pot, saute yellow onion, carrots, celery in 2 tbsp vegetable oil for 3-4 minutes.
Add chicken broth, peri peri sauce, chopped chicken, frozen mixed veggies and parboiled rice to the pot and bring to a gentle boil. Reduce heat and allow to simmer until rice is cooked. About 15 minutes.
Add chopped fresh parsley. Taste the soup and adjust the amount of salt and pepper or add more peri peri sauce to your taste preference.
