CREAMY CUCUMBER & DILL SALAD

We love the freshness of this quick and simple cucumber salad.  It pairs beautifully with bbq’s or salmon dishes.  I personally have never been a fan of raw onions in my salads but they are a must have in this one as they add so much dimension to the flavour profile.  I just make sure to slice them paper thin (thank you to my @OXO mandolin!)

INGREDIENTS

  • 1/2 cup sour cream

  • 3 tbsp Fresh dill, chopped

  • 1 tbsp aged white balsamic vinegar

  • 1 tsp apple cider vinegar (white vinegar works too)

  • 1/2 tsp pink or sea salt

  • 1/2 tsp coarse black pepper

  • 1 1/2 tsp sugar

  • 6 cups English (hothouse) Cucumber, sliced

  • 1 small Red onion, sliced super thin

DIRECTIONS

In a large bowl, blend the sour cream, dill, balsamic vinegar , apple cider vinegar, sugar, salt and pepper. Adjust sugar, salt and black pepper to your taste preference.

Add the sliced cucumbers and red onions and toss to coat thoroughly.
