CURRIED CHICKEN, RED PEPPER & THAI BASIL PIZZA

Ok now….this pizza is my new favourite!!!  The perfect marriage of flavours from the marinated chicken, curry pizza sauce, roasted red peppers and the fresh Thai basil & cilantro sprinkled on the top just before serving is jaw droppingly good! Like REALLY good! It is also extremely easy and simple to make.  

Makes 2 - 12” pizzas

INGREDIENTS:

Pizza dough or flatbread

2 Chicken breast, cubed

1 small red onion, sliced thin

Marinade:

  • 1 tbsp fish sauce

  • 1 tbsp brown sugar

  • 1 tbsp rice vinegar

  • 1 tsp minced garlic

  • 1 tsp ginger paste

  • 1 tbsp lime juice

  • 1 tbsp chili garlic sauce

Yellow Curry Sauce:

  • 1 1/2 cups full fat coconut milk

  • 2 ½ tbsp yellow curry paste

  • 1/4 tsp turmeric

  • ¼ tsp salt

  • 2 tsp brown sugar

  • Cornstarch slurry (1 tsp cornstarch & 2 tsp cold water combined)

1 large red pepper, julienned

Fresh Thai Basil leaves

Fresh cilantro leaves

CHICKEN:

Marinade cubed chicken breast in marinade ingredients for at least 2 hours.  Overnight is even better.

Heat frying pan over med high heat.  Add 1 tbsp olive oil.  When oil is shimmering, add drained chicken and red onion.  Sauté for 4-6 minutes or until chicken is cooked through.  Remove from heat and allow to cool.

CURRY PIZZA SAUCE:

Blend first 5 sauce ingredients in small pot and simmer on medium heat for 5 minutes.  Turn heat to low and add cornstarch slurry, stirring continuously.  Stir until thickened for about 3-5 minutes.  Remove from heat and allow to cool.

PIZZA:

Preheat oven to 500 degrees F.

Roll out your pizza dough or even used pre baked pizza crusts or flatbread.  Prepare your pizza pan by oiling with olive oil or even generously sprinkling with cornmeal.  Place pizza dough or flatbread on your pan.

Spread cooled curry sauce over pizza.  Sprinkle with a handful or two shredded mozzarella cheese.

Top with half of the chicken mixture and half of the red pepper per pizza. 

Bake for 12-15 minutes if using pizza dough until cheese is bubbling and bottom is golden brown or according to package directions if using pre-made crusts or flatbread. 

Remove from oven and sprinkle Thai basil and cilantro on top before serving.
