ONE POT GROUND BEEF STROGANOFF
This is my version of a super easy and delicious poor man’s beef stroganoff cooked in one pan! Packed with flavour, hearty and so satisfying! I usually serve both of my stroganoff versions with steamed peas or mixed vegetables as our kids love how their sweetness contrasts with the savoury flavours of the gravy. Big chunks of buttered fresh bread to sop up the gravy is a must!

Ingredients
1 tbsp cornstarch
2 tbsp avocado or olive oil
1 cup sliced fresh mushrooms
1 medium onion, chopped
3 garlic cloves, minced
1 lb lean ground beef
Salt and black pepper to taste preference
1 tsp paprika
1/2 tsp seasoning salt
1 tbsp dijon mustard
2 tsp Worcestershire sauce
4 cups beef broth
5 cups dry egg noodles
3/4 cup sour cream
2 tbsp chopped fresh parsley
Instructions
Heat oil in a large pan or pot over medium-high heat. Add onions and mushrooms and sauté until golden brown and carmelized, stirring occasionally. (approximately 10 minutes)
Add garlic and saute 1 minute longer. Remove onions and mushroom mixture from pan into a bowl and set aside.
Add ground beef to the pot and fry thoroughly. Season with salt and pepper to taste preference.
Drain fat if needed.
Add beef broth, dijon mustard, paprika, Worcestershire sauce, mushroom mixture and season with more salt and pepper to taste preference.
Bring mixture to a light simmer, add egg noodles and gently stir.
Cover and reduce heat to medium-low and simmer for 3 more minutes.
In a small bowl, whisk cornstarch into 3 tbsp cold water. Pour this mixture into the pot, stir gently, cover and continue to cook until noodles are tender, about 3-4 minutes longer.
Remove from heat, add in sour cream and again, gently stir. Let rest for a minute or two.
Garnish with chopped fresh parsley and serve.
