EASY HOMEMADE APPLE TURNOVERS
I love baking with children…especially my grandlovies. Their enthusiasm is contagious and seeing their wonder when they take the first bite of something their little hands have helped make is heart warming. This is a super easy and quick homemade Apple Turnover my loves and I recently made. These yummy sugar topped flaky turnovers are made using store bought pre-made puff pastry sheets and are filled with a yummy spiced apple filling sure to delight your family. I like to use a blend of Granny Smith and either pink lady or gala apples for a perfectly sweet and tart filling.
Makes 18-24 turnovers depending on how big you make them.
INGREDIENTS
TURNOVERS
4 sheets store bought puff pastry dough, thawed
1 large egg
1 Tbsp water
Coarse sugar for topping
APPLE FILLING
4 Tbsp butter
4 granny smith apples, peeled and chopped into small cubes
2 gala or pink lady apples, peeled and chopped into small cubes
1 cup light brown sugar, packed
4 tsp cornstarch
2 tsp cinnamon
1/8 tsp ground nutmeg
pinch salt
1 tsp vanilla
1 tbsp fresh lemon juice
DIRECTIONS
Preheat oven to 400°F and line 2 baking sheets with parchment paper.
MAKE THE FILLING
In a large saucepan, add apples, brown sugar, cornstarch, cinnamon, nutmeg, salt and vanilla extract, lemon juice and stir to combine.
Bring to a low boil over medium heat and then reduce heat to low and allow to simmer for 5-8 minutes or until thickened and apples are tender.
Remove from heat and allow to cool completely.
MAKING THE TURNOVERS
On a lightly floured counter or table, unroll/unfold thawed puff pastry sheet. Dust with flour and roll it out to a 12” square.
Using a pizza cutter, or sharp knife, cut dough into 6 or so equally sized rectangles.
Whisk together the egg and water and brush mixture around the border of each rectangle
Spoon the completely cooled apple filling in the center of each rectangle, making sure to leave a border on all sides.
Fold one side over the the other and press closed with a fork dipped in flour.
Place turnovers on the prepared baking sheets, leaving some room in between each one. Brush the tops of the turnovers with egg wash and sprinkle liberally with the coarse sugar.
Bake for 20-25 minutes, until golden brown and puffed.
