BANANA POPPYSEED LOAF with BROWN BUTTER MAPLE FROSTING

INGREDIENTS

  • 1 1/2 cups white sugar

  • 2 cups flour

  • 2 1/2  tsp baking powder

  • 1 tsp salt

  • 4 large overripe bananas peeled

  • 1 tsp vanilla extract

  • 2 large eggs

  • 3 tsp poppy seeds

  • 1 tsp lemon zest

  • 2 tsp lemon juice

  • 1/2 cup melted butter

For the Brown Butter Maple Frosting

  • 3/4 cup butter, room temperature

  • 2 cups powdered icing sugar (up to 1/2 cup more if needed)

  • 1 tsp vanilla extract

  • 1 tbsp Maple syrup

  • Pinch of salt

  • 1-2 tbsp heavy whipping cream

DIRECTIONS

  1. Preheat the oven to 350Ā°F (175Ā°C).

  2. In a large bowl, combine all the dry cake ingredients.

  3. In a mixer bowl, add the mashed bananas, eggs, vanilla, melted butter, lemon juice and zest. Beat until light and well mixed.

  4. Slowly add the dry ingredients 1 cup at a time, blending well.

  5. Pour the batter evenly into two loaf pans coated with baking spray or lined with parchment.

  6. Bake for 35 - 40 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let the loaves cool in the pans for 15 minutes, before removing them onto racks to cool completely.

  8. Allow the loaves to fully cool before frosting.

Note: this recipe works very well in both cake or cupcake forms as well!

Frosting Directions

  1. Place butter in a heavy pan over medium heat. Stir frequently as it melts and begins to bubble. Once it foams, keep stirring, scraping the sides and bottom to prevent burning. In about 8-10 minutes, the butter will turn a deep golden color with tiny brown specks and smell nutty.

  2. Pour the browned butter into your mixer bowl and refrigerate until itā€™s completely cool.

  3. Once the butter is cool, beat it on high speed for about a minute until smooth.

  4. Add the remaining ingredients (like maple syrup and powdered sugar). Mix on low until combined, then increase to high and beat until fluffy. Adjust with more powdered sugar or cream as needed for the right consistency.
