CHUNKY HAM AND NAVY BEAN SOUP

Serves 4-6
INGREDIENTS
1 tbsp olive oil
1 onion, chopped
1 large carrot, chopped
3 ribs celery, chopped
2 medium white potatoes, cubed
4 cloves garlic, minced
1 tsp Worcestershire Sauce
1/2 tsp lemon juice
1/2 tsp mustard powder
1/4 tsp Italian seasoning
1/2 tsp smoked paprika
1 bay leaf
4 cups ham or chicken broth
2 cups water
2 cups cooked ham chopped (or more if you like a meaty soup)
2 (14 ounce) cans white navy beans, drained
Salt & pepper to taste
DIRECTIONS
Heat oil in a large soup pot over medium-high heat. Add onions, carrots, and celery, and sauté for 7-10 minutes, stirring occasionally until softened and lightly browned.
Stir in garlic and cook for 30 seconds, just until fragrant.
Add Italian seasoning, smoked paprika, mustard powder, Worcestershire sauce, chicken broth, water, ham, and the drained white beans. **For a thicker soup, you can mash an additional can of drained beans with a potato masher and add them to the soup before the next step.
Bring to a low boil before reducing the heat to medium-low. Partially cover with the lid, and simmer for 20-25 minutes, or longer for deeper flavor.
Taste and adjust seasoning with salt and pepper as needed.
Serve hot and enjoy!
