CREAMY ITALIAN SAUSAGE FREGOLA SOUP

Serves 4-6

INGREDIENTS

  • 1 lb mild or hot Italian sausage, casings removed

  • 1 onion, chopped

  • 2 ribs of celery, chopped

  • 3-4 cloves garlic, minced

  • 1 tbsp flour

  • 4 cups chicken broth

  • 1 (28 ounce) can crushed or diced tomatoes with juices

  • 1/4 tsp red pepper flakes

  • 1/4 tsp Italian seasoning

  • 2 cups fregola pasta (or any of your preference)

  • 1 cup heavy/whipping cream

  • 1/4 cup freshly grated parmigiana cheese

  • Small piece of parmigiana rind (optional)

  • 2 cups fresh or freeze dried chopped spinach or kale (or 1/2 cup frozen)

  • Salt & pepper to taste

DIRECTIONS

  1. Fry the Italian sausage meat in a large soup pot over medium-high heat for 7-10 minutes, breaking it up and stirring occasionally, until browned.

  2. Remove the sausage and set it aside in a bowl.  Leave about 1 tablespoon of the fat in the pot.

  3. Add the onion, carrots and celery to the pot and cook for 4-5 minutes.

  4. Add the sausage back in, then stir in the flour and garlic. Cook for 1 minute, stirring.

  5. Add the chicken broth slowly, while stirring until the flour is blended in well.

  6. Add the canned diced or crushed tomatoes, Parmesan rind (if using), and Italian seasoning. Turn the heat to high and bring to a slow boil.

  7. Add the Parmesan cheese and uncooked pasta. Reduce the heat and simmer until the pasta is cooked (check package instructions).

  8. Stir in the cream and cook for another 5 minutes.

  9. Add the spinach, stir until wilted, and season with salt and pepper to taste.
