SMOKED ROAST BEEF SANDWICHES with TIGER SAUCE
Ok….this amazingly delicious sandwich is one that everyone in our family loves. My husband enjoys messing around with his Broil King smoker and makes a pretty mean smoked prime rib which is perfect for this recipe.
The first time my husband made me this sandwich, I slightly turned my nose up before even tasting it….yes, I am a food snob to the utmost degree. 🤷♀️ I was mildly grossed out by the sweet pickles I saw in it but so as to not hurt his feelings, I took a bite and the rest is history. It is now in my top 3 favourite sandwiches which is saying a lot as we eat many varieties of sandwiches around here.
Shout out about the MEATER PLUS Bluetooth enabled thermometer:
We allow our roasts to dry out uncovered at room temperature for a few hours, and then generously coat it with my very own “Her Copper Kitchen’s Signature House Seasoning”. Pop it into the smoker with the trusty and ALWAYS accurate Bluetooth enabled Meater Plus probe and let the smoker do its thing. We then let it rest covered in tinfoil for 15-25 minutes and finally, slice it very thin if it’s for sandwiches as it makes layering it easier.
MEATER ‘s app notifies my phone when there is 10 minutes left remaining for whatever doneness I desire. It really is a user friendly app. For example; for a roast, I select “beef” then “roast” and then select medium rare and hit start. It does the rest. I can check in on the app whenever I want and it shows the internal temperature as well as how many minutes are remaining. This allows me to time to start cooking sides or other dishes for dinner in a timely manner. It is super convenient and takes all of the guesswork out. No more over cooked meat as the probe is calibrated within 0.5 degrees in the internal sensor.
Charging it is as easy as putting it back into it’s pretty little wooden box which has a AAA replaceable battery in the bottom. The probe keeps its charge for over 24 hours for those long slow cooks/smokes. The probe I have is the MEATER Plus which has a 50m range.
Anyways….back to this amazing sandwich recipe.
INGREDIENTS:
Smoked Beef, medium rare and sliced pretty thin. ( I prefer to use a Prime Rib Roast but have used steak before as well)
Soft Onion or Cheese Buns
Red Onion, sliced into very thin rounds
Sweet Bread & Butter Pickles ~ you will be surprised how much goodness they add to the sandwich!
Cheddar cheese slices
Tiger Sauce:
1/2 cup mayonnaise
1/3 cup sour cream
1/2 tsp Dijon mustard
1/2 tsp dry mustard
2 cloves garlic, minced super fine
1/2 tsp fresh lemon juice
2 tbsp horseradish (or more!)
Splash Worcestershire sauce
Blend all ingredients together well. Stays good in the refrigerator for a week.
DIRECTIONS
Slice your buns in half and toast the inside.
Slather with tiger sauce. SLATHER!
Add still hot smoked beef, cheddar cheese, a few sweet pickles and some thin rounds of red onion.
Top with other half of the bun and DEVOUR!
