EASY 30 MINUTE PINEAPPLE CHICKEN

INGREDIENTS:

  • 2 lbs chicken pieces of choice

  • 1 1/2 cups pineapple juice

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1 tsp paprika

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 cup water

  • 1/4 cup soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp mustard

  • 1 tbsp ketchup

  • 2 tbsp honey (or more to taste)

  • 1 Red Bell pepper, chopped

  • 1 cup pineapple pieces

  • 2 ribs Celery, chopped

  • 1 bunch green onions (scallions), chopped

Optional Garnishes:

Red chili flakes

Roasted Sesame seeds

Chopped scallion

DIRECTIONS

  1. In a wok or deep skillet, pour in the pineapple juice and bring it to a gentle of simmer over medium heat.

  2. Add the chicken pieces and cook until most of the juice is absorbed and the chicken is fully cooked.

  3. Stir in the remaining ingredients—except for the vegetables and pineapple.

  4. Let the sauce simmer and thicken to your liking, stirring occasionally. Taste and adjust the seasonings as needed.

  5. Add the vegetables and pineapple, and cook for about 3 minutes, or longer if you prefer softer veggies.

  6. Serve hot over rice and garnish with green onions, toasted sesame seeds, or a pinch of red chili flakes for a little kick.
