CLASSIC SOUTHERN COLESLAW
A super easy recipe which only takes 5 minutes to throw together, this quintessential and delicious summer salad pairs well with bbq’s, cookouts, potlucks, Etc. I usually serve this salad alongside pulled pork sandwiches, beef on a bun, fried chicken dinners and more. It is also a great salad to have ready made in the fridge for a quick snack. We love the sweet pop of raisins in our coleslaw but it is optional if you aren’t a fan of raisins.
INGREDIENTS:
10 cups shredded coleslaw mix (or 8 cups shredded cabbage, 1 cup shredded red cabbage & 1/2 cup julienned carrots)
1 cup Mayonnaise
4 tbsp White Sugar
2 tsp White Vinegar
2 tsp Apple Cider Vinegar
1 tsp Mustard
1/4 tsp celery seed
1/4 tsp black pepper
1/2 cup raisins (optional)
DIRECTIONS:
Add the mayonnaise, sugar, vinegars, mustard, celery seed and pepper to a large mixing bowl and whisk together until fully combined.
Add in the coleslaw mix and raisins (if using) and stir well to combine. If you like a dryer coleslaw, add more shredded coleslaw mix.
Refrigerate for at least an hour before serving.
