PERUVIAN GRILLED CHICKEN WITH AJI VERDE SAUCE
This Peruvian inspired chicken dish explodes with all the best flavours! Grilled, tender & juicy boneless chicken thighs in a zippy, slightly spicy marinade topped with an outstanding green sauce. The groans I heard around the dinner table tonight were a definite testament as to how good this dish is.
INGREDIENTS
CHICKEN:
* 2 lbs chicken thighs, boneless, skinless
* 5 cloves garlic
* 1/3 cup soy sauce
* 2 tbsp lime juice
* 1/4 cup brown sugar
* 1 tbsp olive oil
* 2 tsp cumin
* 1 tsp paprika
* 1 tsp chili powder
* 1 tsp fresh grated ginger
* 1/2 tsp dried oregano
* 1/2 tsp Black pepper
* 1/4 tsp red chili flakes
AJI VERDE GREEN SAUCE:
* 3 jalapeños seeded, chopped
* 1 cup fresh cilantro
* 3 green onions chopped
* 3 cloves garlic, minced
* 1/2 cup mayonnaise
* 1/4 cup Greek yogurt
* 1/4 cup grated Parmesan or cotija cheese
* 1 tbsp lime juice
* 1/2 tsp pink or sea salt
* 1/4 tsp black pepper
* 2 tbsp olive oil
SIDE SALAD:
Amazingly fresh and perfect compliment to the chicken.
1 English cucumber, diced
1 cup grape tomatoes, quartered
2 green onions, chopped
1/4 cup fresh cilantro
1/4 cup chopped Kalamata olives
1/4 cup cotija cheese (optional)
2 tbsp olive oil
Fresh squeezed juice of half a lime
2 tsp balasamic vinegar
3/4 tsp honey
1/4 tsp garlic powder
Salt and pepper to taste
Toss all ingredients together and serve.
