BROWN BUTTER & GARLIC RICE
This rice dish is good enough to eat all on its own! The nuttiness of the browned butter & garlic and the slightly toasted rice combine to make for a depth of full bodied flavour and this recipe is sure to become a favourite side dish in your home.
Serves 3-4
INGREDIENTS:
2 tbsp butter
2 tbsp olive oil
9 cloves garlic, sliced
2 cups jasmine rice
4 cups chicken broth
1/4 tsp red chili flakes
chopped fresh parsley
DIRECTIONS:
In a saucepan over low/medium heat, combine butter and olive oil and cook stirring often over low heat until butter is browned…about 3-5 minutes. Once butter has browned add garlic & red chili flakes and cook, stirring constantly for 3 minutes.
Add rice and cook for about 4 minutes, stirring often to avoid burning. Rice will toast slightly.
Add chicken broth and bring to a boil. Reduce heat to medium-low. Cover and cook for 20-25 minutes.
Remove lid and add chopped parsley. Gently fluff rice with a fork.
