SANTA’S LOG (Chocolate TV Roll)

A holiday favorite of our family, Santa’s Log is a must-have during our Christmas festivities! Chocolate,  graham cracker crumbs, mini marshmallows, and chopped nuts come together in this easy and quick no-bake treat, finished with a snowy coating of shredded coconut. Simple to make and bursting with festive flavor, it’s in the top 3 requested treats each holiday season in our house.

INGREDIENTS:

1 Egg, beaten

1 cup Icing Sugar

1/2 cup Cocoa powder

1/2 cup graham crumbs

4 tbsp melted butter

2 1/2 cups colored marshmallows

1/2 cup chopped walnuts or pecans

1 - 2 tbsp cream as needed

Plus

Shredded Coconut for rolling

DIRECTIONS:

1. Mix first 8 ingredients together in bowl. Add an extra tablespoon of cream if the mixture is too dry.

2. Form into a long roll/log.

3. Roll in coconut. Wrap in parchment paper and chill.

4. Cut into thin slices as needed. Store in airtight container in the fridge.
