STRAWBERRY CRANBERRY RICE CRISPIE SQUARES

Take the classic treat to the next level with Her Copper Kitchen’s Strawberry & Cranberry Rice Krispie Squares! Made with the yummy flavors of freeze-dried strawberries and cranberries, these sweet and tangy squares are a fruity twist on the age old favorite.

Perfect for school lunches, potlucks, or a quick snack, they’re as easy to make as they are delicious.

The freeze-dried fruit adds bursts of flavourful crunch, perfectly balanced with gooey marshmallows and crispy rice cereal.

INGREDIENTS

  • 1/2 cup salted butter

  • 12 cups mini marshmallows, divided

  • 1 teaspoon pure vanilla extract

  • 12 cups rice krispies cereal

  • 1/2 cup chopped freeze dried cranberries

  • 3/4 cup chopped freeze dried strawberries

DIRECTIONS

  1. Line a 9-inch square baking dish with parchment paper. Set aside.

  2. In a large saucepan, melt and lightly brown butter over medium heat for about 5 minutes. *Be careful not to overbrown the butter as it can quickly turn from browned to scorched.

  3. Once browned, add in all but 1 cup of the marshmallows. Reduce heat to low and continue stirring until completely melted.

  4. Remove from heat and stir in the vanilla. Add the cereal and the remaining 1 cup of marshmallows and gently stir until combined.

  5. Pour into the prepared baking dish. Press GENTLY with your fingertips just until completely spread out (the harder you pack them in, the harder they are to eat).

  6. Allow to set, about 1 hour. Cut and enjoy!
