CAJUN SAUSAGE, POTATO & CORN CHOWDER

This Cajun seasoned Sausage Potato & Corn Chowder is loaded with smoked sausage, potatoes, & veggies all swimming in a flavourful and thick cheesy broth. Comfort food at its best, especially paired with soft buns or thick slices of HOMESTYLE bread slathered with butter for dipping into the soup.

Servings 6 - 8 servings

Ingredients

* 1 lb smoked sausage, cubed

* 5 tbsp butter, divided

* 1 tbsp olive oil

* 2 carrots, peeled & diced

* 3 stalks celery, diced

* 1 large yellow onion, diced

* 2 cups corn niblets

* 2 cloves garlic, minced

* 4 cups cubed gold or russet potatoes

* 1 tsp dried basil

* 1 tsp dried oregano

* 1 tsp dried parsley flakes

* 1/4 tsp red chili flakes (optional)

* 4 cups chicken stock

* 1/3 cup flour

* 3 cups milk

* 1/2 cup heavy cream

* 1 tsp salt

* 1/2 tsp pepper

* 1/2 tsp Cajun seasoning

* 2 cups grated sharp Cheddar cheese

* 1/4 cup sour cream

Instructions

In a large pot, heat olive oil and melt 1 tablespoon of the butter. Add the cubed smoked sausage, diced carrots, celery and onion and cook for 5-7 minutes until tender. Add garlic and cook for another minute. 
Stir in the cubed potatoes, corn niblets, dried oregano, basil, parsley, salt, pepper & Cajun seasoning. Add chicken stock and bring to a boil over medium heat and cook for 15-20 minutes until the potatoes are tender.
While potatoes are cooking, melt remaining 4 tablespoons of butter in a saucepan over medium heat. Stir in flour and cook, whisking constantly, for 1 minute. While continuing to whisk, slowly pour in milk. Stirring constantly, cook until it begins to lightly boil and thicken before stirring in the heavy cream. 
Remove from heat and when the potatoes are tender, pour and stir the cream mixture into the soup. Lower heat and stir in the cheese and sour cream. Adjust seasonings to your taste preference. Garnish bowls of soup with fresh chopped chives, parsley, grated cheese and/or chili flakes.
