BLUEBERRY BANANA & CHOCOLATE MUFFINS with STREUSEL TOPPING

Ooh, let me tell you about these delicious Blueberry Banana and Chocolate Chip Muffins with Cinnamon Streusel Topping! 

The batter is perfectly sweetened and spiced with a hint of cinnamon for that warm, cozy flavor we all know and love. And the best part? They come topped with an irresistible cinnamon streusel that adds a sweet and crunchy texture to each yummy bite.

Now, onto the fun facts! Did you know that blueberries are not only tasty, but they're also packed with antioxidants and vitamins? And bananas, of course, are a great source of potassium and fiber. As for chocolate chips... well, they just make everything better, don't they?

INGREDIENTS 

Dry ingredients:

  • 2-1/4 cups flour

  • 1 tablespoon baking powder

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 1/2 cups mashed bananas (about 4 bananas)

  • 1/2 cup melted butter

  • 3/4 cup packed light brown sugar

  • 2 eggs

  • 2 tsp vanilla

  • 1 tsp lemon zest

  • 2 tsp lemon juice

  • 2 cups fresh or frozen blueberries

  • 1 cup semi-sweet chocolate chips


Cinnamon Streusel Topping

  • 3/4 cup flour

  • 1/2 cup sugar 

  • 1 tsp cinnamon

  • 4 tbsp melted butter

  • Turbino sugar for a crunchy finish (optional)

DIRECTIONS 

  1. Preheat the oven to 400°F 

  2. Prepare your muffin tins by lining with paper baking cups or greasing with cooking spray. 

  3. In a medium sized bowl, blend the dry ingredients together well and set aside.

  4. In a separate bowl, beat the melted butter, brown sugar and eggs together until well blended. Add the vanilla, and mashed bananas and beat again until blended.

  5. Add the wet mixture into the flour mixture along with the blueberries and chocolate chips and gently stir ONLY until combined.  Traces of unblended flour is ok!

  6. In a small bowl, thoroughly combine the streusel ingredients until crumbly. 

  7. Spoon the muffin batter into the muffin tins right to the tops and generously top with the cinnamon streusel topping.  For an extra special crunch, finish off with a sprinkling of coarse turbino sugar on top of the streusel before baking.

  8. Bake in the preheated oven at 400 degree F for 20-24 minutes or until a toothpick inserted in the center comes out clean.

  9. Cool muffins in tins for 5-10 minutes before removing yo a cooling rack.
