CHEWY OATMEAL CHOCOLATE CHIP COOKIES

You WANT to make these deliciously chewy chocolate chips cookies to dip in your cold milk, or hot tea/coffee!  These are so good that you just can't stop at one.  They also make a thoughtful addition to a care package for family and friends. You can also make and freeze the dough balls to bake another day for unexpected company.  Not much is more inviting than the delicious aroma of freshly baked cookies to welcome someone into your home.

Makes approximately 2 dozen cookies

INGREDIENTS

  • 2 ½ cups flour

  • 2 cups quick rolled oats

  • 1 cup white sugar

  • 1 cup butter, softened

  • 1 cup brown sugar

  • 3 large eggs

  • 2 tsp baking soda

  • 1 tsp vanilla

  • 1 tsp salt

  • 1/2 tsp cinnamon

  • 1 cup chocolate chips (plus more for topping cookies before baking)

DIRECTIONS

  1. Preheat your oven to 350 degrees F.

  2. Beat the eggs in small bowl.

  3. Add the vanilla to the eggs and mix. Set aside.

  4. Cream together the softened butter, white sugar and brown sugar with a hand blender or in a mixer.

  5. Pour in the egg and vanilla mixture and mix until well blended.

  6. In a separate bowl, blend the flour, salt, baking soda and cinnamon.

  7. Slowly add the flour mixture a bit at a time to the butter, sugar and egg mixture in the mixer until thoroughly combined.

  8. Stir in the oatmeal and chocolate chips and mix until combined.

  9. Scoop heaping tablespoons onto parchment lined baking sheets and top with a few extra chocolate chips.

  10. Bake in 350 degree oven for 10-12 minutes until bottoms are golden brown. (13 minutes if you like a crunchier cookie)

  • These freeze very well!
