OLD FASHIONED BREAD PUDDING w/ SALTED BROWN BUTTER CARAMEL SAUCE

Makes 6-8 servings

INGREDIENTS

Bread Pudding

  • 5-6 cups of cubed Brioch and/or Raisin Bread (I like to use equal amounts of both)

  • 3 tbsp of butter

  • 5 Eggs, beaten

  • 2 cups Milk

  • 1/2 cup half & half cream

  • 3/4 cup white sugar

  • 1 1/2 tsp vanilla extract

  • 1 1/2 tsp cinnamon

  • 1/4 tsp salt

Salted Brown Butter Caramel Sauce

  • 1/2 cup heavy cream

  • 3 tbsp butter, salted

  • 2 tbsp brown sugar

  • 1 tbsp white sugar

  • 1 tsp vanilla extract

  • 1/8 tsp salt

DIRECTIONS

Bread Pudding

  1. Preheat oven to 350 degrees.   Generously butter a 9” x 11” baking dish.

  2. Arrange the cubed bread in the greased baking dish.

  3. Melt the 3 tbsp of butter, and drizzle evenly over the bread cubes

  4. In a medium sized bowl, beat eggs.  Add the remaining bread pudding ingredients and mix well.

  5. Slowly pour this egg mixture over the bread, making sure to evenly coat all the cubes.

  6. Cover and refrigerate for at least one hour (this can be made up to 12 hours before baking!)

  7. Remove cover and bake for 45 minutes, or until the top of the bread pudding springs back after lightly pressing down.

  8. Remove from oven and allow to set and cool for 15 minutes before serving.

Salted Brown Butter Caramel Sauce

  1. In a small saucepan over medium heat, melt and brown the butter until there are little golden brown buts floating and it smells nutty.

  2. Add the sugars and vanilla. Stir and cook for 2-3 minutes until sugar is dissolved and it begins to bubble.  Lower heat to low and slowly drizzle in the heavy cream while whisking.

  3. Remove from heat and drizzle evenly over the baked bread pudding.
