INGREDIENTS

The Cake/Bread

  • 1 1/2 cups flour

  • 1/2 cup butter, softened

  • 2/3 cup white sugar

  • 2 large eggs, room temperature

  • 2 tsp vanilla

  • 2 tsp baking powder

  • 1/4 your voice, tsp salt

  • 1/2 cup milk

The Apple Filling

  • 3 cups apples, (core removed, peeled, and chopped) I like to use tart apples like granny smith but any kind will work.

  • 1 1/2 tsp ground cinnamon

  • 1/4 tsp nutmeg

  • 2 tbsp white sugar

  • 1 tbsp lemon juice

The Cinnamon Sugar

  • 1/2 cup packed light brown sugar

  • 2 tsp cinnamon

  • Pinch of salt

The Icing

  • 1/2 cup powdered sugar

  • 1 tbsp cream

DIRECTIONS

  1. Pre-heat your oven to 350F and prep a loaf pan by greasing it with non-stick cooking spray or lining it with parchment paper.

  2. Combine brown sugar, salt, and cinnamon in a small bowl; set aside.

  3. Cream together white sugar and butter in a large bowl using an electric mixer until light and fluffy. Add eggs and vanilla, beating until combined.

  4. In another bowl, whisk together flour and baking powder. Gradually add the flour mixture to the wet ingredients and mix.  Add in the milk, stirring until smooth.

  5. Pour half of the batter into the prepared loaf pan, spreading it evenly.

  6. Mix apple filling ingredients in a small bowl. Layer half of the apples over the batter, sprinkle with two tablespoons of the brown sugar mixture, then add the remaining batter. Top with remaining apples and sprinkle the rest of the brown sugar mixture on top.

  7. Bake at 350F for about 1 hour, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 30 minutes.

  8. Combine glaze ingredients in a small bowl until smooth, then drizzle over the cooled bread.

  9. Slice and serve!
