PEAR, FETA AND BACON SALAD

INGREDIENTS 

8 cups chopped romaine

2 pears, diced

1/2 small red onion, sliced thin

1 cup fried bacon pieces

1/2 cup feta cheese crumbles

1/2 cup candied walnuts or pecans

1/2 cup dried cranberries

Toss all ingredients together. Drizzle with dressing. 

DRESSING:

Blend together

1/3 cup balsamic dressing

1/3 cup poppyseed dressing

Or:

HOMEMADE BALSAMIC POPPYSEED DRESSING

  • 1/2 cup mayonnaise 

  • 3 tbsp balsamic vinegar

  • 2 tbsp honey 

  • 2 tbsp sugar

  • 1 tbsp poppy seeds

  • 1/2 tsp onion powder

  • Salt & Pepper to taste

DIRECTIONS

Add the mayo, vinegar, honey and sugar in a glass jar or bowl.

Whisk or shake together until smooth. Salt and pepper to taste, then mix in the poppy seeds.

Serve over your favorite salad. This dressing stays fresh in the refrigerator up to 1 week. Shake well before serving.
