I picked up a huge bag of english cucumbers, grape tomatoes and jalapenos from one of our many local greenhouses today out by Desert Blume and this is what I came up with. It’s my take on a Mexican Street Corn Salad, and it’s seriously amazing. Think charred corn with a generous kick of jalapenos, smashed cucumbers to cool that “kick”, zesty lime, an abundance of other delicious ingredients and the tastiest dressing to bring it all together. It’s like a fiesta in every bite! It’s a game changer for using up excess cucumbers and tomatoes.

JAMAICAN SORREL CONCENTRATE
Today I’m sharing one of our favourite annual Christmas traditions – my Jamaican Sorrel Concentrate recipe!
It's a festive flavor explosion bursting with the essence of hibiscus petals, oranges and spices. If you're a teetotaler like us but want that rum vibe, just let the sorrel simmer at around 175 degrees F for 3 hours to let the alcohol gracefully dissipate while still amping up the flavor…or feel free to skip the rum. We mix ours with either club soda or ginger ale. Both ways are delicious! Cheers to making memories and sipping in style!

Impress your family and guests with this deceptively easy but fancy tasting and looking dish. The tangy lemon and salty capers are perfectly balanced by the butter and cream into a absolutely delicious sauce. As one of my sons said, this will definitely be a birthday meal request in the future.

EASY JALAPENO CHEDDAR BISCUITS
My soft on the inside, crispy on the outside, flaky, buttery multi-layered, mile high biscuits (I could go on but will stop there) are where it’s at! They are what every bowl of comforting soup or stew needs to make a meal complete.
Experiment with flavours by tossing some roasted garlic, shredded cheese, chives, etc in the dry ingredients before blending in the buttermilk for some variations.
