EGYPTIAN CHICKEN & TURMERIC BASMATI RICE
My Egyptian chicken and turmeric basmati rice recipe is a labor of love, inspired by a street vendor we found during our wanderings around New York City.
After returning home, I couldn't resist the challenge of recreating those mouthwatering flavours. The secret? A peppered white sauce that adds a creamy kick, and a drizzle of homemade chili oil for that perfect spicy touch. Topped with the freshness of shredded iceberg lettuce and a cucumber tomato salad, this dish is so stinking good!
DETOX CHOPPED SALAD
Recharging after the holiday feasting and an insanely busy November and December, I am finally allowing myself to slow down. Today I treated my body to a burst of freshness – a colorful blend of nutrient-packed crisp veggies, and a delicious zesty dressing. 15 MINUTE PEANUT BUTTER BUTTERSCOTCH SQUARES
These squares are a Christmas treat staple in our home. Extremely easy and ready in 15 minutes, they are delicious, rich little morsels. You can use either plain white marshmallows or live a little and use the fruity colored ones. Both are equally yummy.
JAMAICAN SORREL CONCENTRATE
Today I’m sharing one of our favourite annual Christmas traditions – my Jamaican Sorrel Concentrate recipe!
It's a festive flavor explosion bursting with the essence of hibiscus petals, oranges and spices. If you're a teetotaler like us but want that rum vibe, just let the sorrel simmer at around 175 degrees F for 3 hours to let the alcohol gracefully dissipate while still amping up the flavor…or feel free to skip the rum. We mix ours with either club soda or ginger ale. Both ways are delicious! Cheers to making memories and sipping in style!

If you enjoy comfort food, you'll love my Easy Jamaican Curried Chicken with chewy dumplings—a delicious twist on the classic comfort of chicken and dumplings. Impress your family and guests with this deceptively easy but fancy tasting and looking dish. The tangy lemon and salty capers are perfectly balanced by the butter and cream into a absolutely delicious sauce. As one of my sons said, this will definitely be a birthday meal request in the future.

My soft on the inside, crispy on the outside, flaky, buttery multi-layered, mile high biscuits (I could go on but will stop there) are where it’s at! They are what every bowl of comforting soup or stew needs to make a meal complete.
Experiment with flavours by tossing some roasted garlic, shredded cheese, chives, etc in the dry ingredients before blending in the buttermilk for some variations.

SWEET AND SPICY JALAPEÑO CHICKEN
My Sweet & Spicy Jalapeño Chicken has tender pieces of pan-fried chicken and jalapeño peppers in a sweet and slightly spicy sauce with just a hint of lime. The optional red bell peppers add a pretty pop of colour but the star of the dish is definitely the jalapeños. Depending on your spice tolerance, you can adjust the heat level by using or discarding the jalapeño seeds. Served on a bed of jasmine rice and garnished with toasted sesame seeds, cilantro and an extra squeeze of lime, this dish is an explosion of flavours sure to please even the fussiest of eaters.

Check out my budget-friendly Philly cheesesteak sandwich made with ground beef and sautéed onions and peppers. I combined the classic flavors of the traditional Philly cheesesteak with a wallet-friendly twist. Using ground beef instead of steak not only saves money, but also adds a great texture to the sandwich. It's a budget-friendly sandwich that will have you coming back for seconds, thirds, and maybe even fourths.

My Tuna Casserole has the perfect combination of creamy, cheesy goodness and hearty flavours that scream comfort food. Not only is it super easy to make with ingredients you most likely have in your pantry, it's also incredibly delicious .
With the addition of golden sautéed onions and celery, thyme and a perfect blend of spices, my tuna casserole is an elevated version of the typical boring tuna casseroles from days past.

EASY OLD FASHIONED STUFFED PEPPERS
With a handful of simple ingredients and left over rice, these easy Stuffed Peppers are full of flavour and the nostalgia of days past. They are filled with seasoned ground beef, rice, tomatoes and tomato sauce, and of course, cheese. My version includes diced green chili peppers for a bit more flavour. They are then topped with more cheese (because you can never have enough!) and baked until golden.
